Jelly Filled Doughnut Recipe
45 - 60 min
Makes 16 doughnuts
You will need:
- 2 packages [ 1/4 oz each ] active dry yeast
- 1/2 cup warm water
- 1/2 cup warm 2% milk
- 1/3 cup butter, softened
- 1 cups sugar
- 3 eggs yolks, room temperature
- 1 teaspoon salt
- 3 to 3 3/4 cups all purpose flour
- 1 jar Palisade Peach Shack's Peach Jam
- 1 large egg white, lightly beaten
- 1/3 cup powder sugar
- Oil for deep frying
Baking Instructions
In a small bowl, combine yeast and warm water; yeast should dissolve into water. In a large bowl, combine milk, butter, 1/3 cup sugar, egg yolks, salt, yeast mixture, and 3 cups flour. Beat ingredients together until smooth. Stir in enough remaining flour to form a soft dough (do not knead).
Place dough into a greased bowl. Turn dough over once to grease the top. Cover with a clean kitchen towel and let rise in a warm place until it doubles in size. Typically this process takes 45 minutes.
Press dough down with your fist. Turn onto a surface that is lightly floured and knead 10 times.
Roll the dough until it is 1/2 inch thick. Flour a 2-1/2 inch round cutter and cut out 12 circles. Place on a greased baking sheet. Cover and let rise until doubled in size, about 45 minutes.
In a pot, heat oil to 375 degrees. Fry doughnuts one at a time, for 1-2 minutes on each side or until golden brown. When a doughnut is completely cooked, remove it from the oil and place it on a paper towel.
Lastly, fill a piping bag with a jar of Palisade Peach Shack's Peach Jam. Stick the tip of the piping bag into the side of the doughnuts, and squeeze until about a tablespoon of jam fills the inside. Sprinkle powder sugar over the top, and enjoy!
It's as simple as that!
